Joseph “Joe” Peter Covino, Jr., 32 was born on April 21, 1985, and passed away at his home on January 1, 2018.

Joseph was born in Plano, Texas to Joseph Peter Covino, Sr. and Michele Loper Carlson. He attended Althol Murray College of Notre Dame and Plano West Senior High School. Joseph worked alongside his father Joe at their family owned restaurant Covino’s Pasta and Pizza right out of high school. He is preceded in death by his loving Grandfather Nicholas Covino, Sr., Grandmother Marie Covino, Uncle Michael Loper, and Grandfather Roger Loper.

He is survived by his father, Joseph Peter Covino, Sr.; and Mother, Michele Loper Carlson (Richard); Nana, Anna Loper; Wife, Sarah Nichole Hamlin; Son, Cale Covino; and Daughters, Brooklyn Covino, and Victoria Hamlin; Aunt/Godmother, Kathleen Covino; Uncle, Nicholas “Nicky” Covino, Jr.; Uncle, James Loper (Tracey); Uncle/Godfather, John Loper (Kathy); Aunt, Elizabeth “Liz” Loper Jones (Dan); Cousins, Michael Loper-Rodriquez (Maximiliano); Kierstin Way (Jimmy), Stephen Loper (Jenn), Tyler Loper, Kailtin, Megan, Courtney, and Annmarie Loper; Sister-in-law, Emma Hamlin; Brother-in-law, Hunter Hamlin; Stepsister, Emily Carlson; and Stepbrother, Gregory Carlson.

Joseph’s favorite sport and hobby was ice hockey. He loved the NHL Team the Dallas Stars. Joseph was a loving son, husband, father, and friend to many.

Funeral Mass:  3:00 P.M., Friday, January 5, 2018

Place:  St. Elizabeth Ann Seton Catholic Church, 2700 W. Spring Creek Parkway, Plano, TX 75023

I just learned of Joe's passing and my heart is broken into a million pieces. I've known Joe since Saigling and my son, Chris, used to come from Haggard to Saigling in the afternoon's to read with Joe in the after-school program. Joe always remembered me when I went to Covino's and always greeted me with a hug and would come to the table and visit when he could. Such a wonderful young man. I've been gone from Plano for a number of years now so had not seen him in a while. Joe and Michelle, you had such a wonderful young man and the heavens are going to be a better place now with Joe there. My deepest condolences to you, his wife, children and the rest of the family.

We are so very sorry to hear about Joe's passing. I went to Bishop Lynch high school with him, and have the fondest memories of riding the bus to school together. He was always in a good mood, even at the ungodly hour of 7am (what high school boy is happy at 7am?!). He was the first person to ask how your day was going - and he truly meant it. He was a great listener and a wonderful friend. I grew up visiting Joe and his dad at Covino's, which is our family's favorite restaurant. I celebrated my college graduation there, my engagement there, and too many birthdays to count. The restaurant is the backdrop of some of my best memories, and the smell of rosemary reminds me of their bread to this day. I've lived in Austin for 15 years now, but I always look forward to coming home to Plano to visit Covino's with my parents. Those pilgrimages to our favorite restaurant won't be the same without Joe's smiling face and comforting hug. He was a light in this world, and will be dearly missed.

We loved eating at Covinos when we lived in Plano from 1993-1998. Joe Sr and Michele were the best hosts and it was such a fun-loving place (we were from NY as was Joe). In our family’s loss, I searched for the magic words that would bring peace and turned to many friends for help. But in the silence I knew there were no words to make it all right. I had been foolish to expect them. The only magic was his great love for me.

You are a big brother, mentor and loved friend to me and can't see you gone. Seeing you play the great game of hockey we both loved got me so inspired as a young kid. You taught me such great people skills and life lessons from brother to brother . Having you apart of my life for 20+ years was a beautiful blessing that is irreplaceable. I know you saw from above the over filled, out the door, wrapped around church of people that you've touched. You're a beloved father, son, husband that has blessed this Earth and will guide from where you are now. We will all miss you, but I know you'll be looking down in us every day . One day we will be together again having family dinner after along night ,having the time of eternity. I can't count the memories we've shared . But I know we will never forget them. A small group of us have been coming to Covino's for over 20+ years. Everyone in the restaurant feels like family and Joe Jr's passing is just heartbreaking for us all. I can honestly say, I have never met a soul who was more of a perfect example of a gentleman than he was. His parents should be proud to have raised such a respectable, polite, kind and loving man. In a world full of selfishness and greed, Joe was a rare breed. Love you buddy! I’m going to miss seeing you every week or when you would come over to the shop with that big smile and mess with me. I can still hear your voice and that laugh of yours. You had such a big heart and influence in my life. I’ll miss our talks about life and the Stars. I’ll cherish our memories upstairs in our parents house. I’ll never forget that year we won state you personally made that the best year of my life and hockey career. You taught me leadership, grit, and respect.
